Ingredients - 1 1/2 cups all-purpose flour - 1 tsp baking powder - 1/2 tsp baking soda - 1/2 tsp fine salt - 3/4 cup sugar - Zest of 1 orange + 1 lemon - 3 large eggs - 3/4 cup extra-virgin olive oil - 1/2 cup whole milk or yogurt - 1/4 cup fresh orange juice - 1 tsp vanilla
Instructions 1) Heat oven to 350°F. Grease and line a 9x5 loaf pan. 2) Whisk flour, baking powder, baking soda, salt. In another bowl, rub zest into sugar; whisk in eggs until pale. Slowly whisk in olive oil, milk, juice, vanilla. 3) Fold dry into wet until just combined. Batter will be loose. 4) Pour into pan; bake 45–55 minutes until a tester comes out clean. Cool 15 minutes, then turn out. 5) Optional glaze: powdered sugar with citrus juice.
Tips - Do not overbake; carryover heat finishes center. - Flavor improves day two.
